Ingredients

  • 6 Roma Tomatoes

  • 2 Garlic Cloves

  • half Red or White Onion

  • 1 Tbsp Fresh Basil, chopped

  • 3 Tbsp Olive Oil

  • salt to taste

  • pepper to taste

Directions

  • Dice the Roma tomatoes and place them in a large bowl. Dice the onion finely and add to the tomatoes.
  • Peel and mince the garlic, then add them to the tomatoes along with the basil.
  • Drizzle the oil on top and season to taste with salt and pepper. Mix together.
  • Allow the rest covered in the fridge for an hour to enhance the flavors

Notes

  • Rest. I definitely don’t always allow it to rest for an hour but it does help the flavors to all meld together.
  • Oil. A good quality Olive Oil will make or break this recipe! If you do not have any on hand I have used Avocado Oil with good results.
